‘ต้มยำกุ้ง’ ดังระดับโลก แนะต่อยอดผลิตภัณฑ์ส่งออกต่างประเทศ

อนุกรรมการ Soft Power ด้านอาหาร​​เสนอ รัฐบาลไทยควรใช้โอกาสนี้ส่งเสริมภาคอุตสาหกรรมขนาดใหญ่  พัฒนาต้มยำกุ้งในรูปแบบหลากหลาย ส่งเสริมการผลิตเป็นเครื่องเทศหรือวัตถุดิบสำหรับ Ready to Cook หรือเมนูพาสเจอร์ไรซ์แบบ Ready to Eat เชื่อกระตุ้นเศรษฐกิจมหาศาล

หลังจากที่ UNESCO ประกาศขึ้นทะเบียน “ต้มยำกุ้ง” ให้เป็นรายการตัวแทนมรดกวัฒนธรรมที่จับต้องไม่ได้ของมนุษยชาติ (The Representative List of the Intangible Cultural Heritage of Humanity) ในการประชุมคณะกรรมการระหว่างรัฐบาลว่าด้วยการสงวนการรักษามรดกทางวัฒนธรรมที่จับต้องไม่ได้ ครั้งที่ 19 (The 19th Session of the Intergovernmental Committee for the Safeguarding of the Intangible Cultural Heritage) กรุงอะซุนซิออง สาธารณรัฐปารากวัย เมื่อวันที่ 4 ธ.ค. ที่ผ่านมา

ด้าน แพทองธาร ชินวัตร นายกรัฐมนตรี กล่าวแสดงความยินดีผ่านระบบวิดีทัศน์ว่าต้มยำกุ้งเป็นอาหารภาคกลางที่สืบทอดกันมารุ่นต่อรุ่น พร้อมเน้นย้ำว่า ต้มยำกุ้งจะกลายเป็นมรดกทางวัฒนธรรมและซอฟต์พาวเวอร์ของไทย

วันนี้ (5 ธ.ค. 67)  สรเทพ โรจน์พจนารัช ประธานชมรมผู้ประกอบธุรกิจร้านอาหาร และอนุกรรมการ Soft Power อุตสาหกรรมอาหาร กล่าวว่า เป็นเรื่องน่ายินดีและภาคภูมิใจว่าการที่ ‘ต้มยำกุ้ง’ ถูกได้รับเลือกเป็นสิ่งที่เหมาะสมแล้ว เพราะเป็นสิ่งที่มีประวัติศาสตร์อันยาวนานเป็นสิ่งที่สะท้อนถึงวิถีชีวิตของคนไทยได้เป็นอย่างดีและทั่วโลกให้การยอมรับ

“หากเราย้อนไปหาประวัติศาสตร์ของต้มยำกุ้งนั้น แทบหาที่มาที่ไปไม่ได้เลย แต่มีบันทึกในตำราอาหารสมัยรัชกาลที่ 5 อย่าง ‘แม่ครัวหัวป่าก์’ ที่มากจากการเสด็จประพาสไปตามจังหวัดต่าง ๆ ของรัชกาลที่ 5 ทางเรือ และมีการนำปลา-กุ้งขึ้นมาประกอบอาหาร จึงคิดว่าน่าจะมีต้นกำเนิดมาจากช่วงเวลานั้น

“เส้นทางอันยาวนานกว่าร้อยปีนี้ จึงเป็นสิ่งที่บอกว่า ‘ต้มยำกุ้ง’ ไม่ใช่แค่อาหาร แต่เป็นภูมิปัญญาที่บ่งบอกวิถีชีวิตของคนไทยภาคกลางริมน้ำว่าเรามีวิถีชีวิตการกิน การอยู่กันมาอย่างไร”

สรเทพ ยังเน้นย้ำอีกว่า จากประสบการณ์ของการเป็นผู้ประกอบธุรกิจร้านอาหาร ต้มยำกุ้ง เป็นอาหารที่ชาวต่างชาติกว่าร้อยละ 99 ชื่นชมว่าอร่อยถูกปาก แตกต่างจากอาหารไทยอื่น ๆ ที่แต่ละคนจะมีความชอบแตกต่างกันไป เนื่องจากการไม่ได้มีกลิ่นหรือรสชาติที่จัดจ้านเกินไป แต่คงไว้ซึ่งความกล่มกล่อมลงตัวของเครื่องเทศ ขิง ข่า ตะไคร้ ใบมะกรูด ที่มีกลิ่นแบบ Aroma Therapy นอกจากผู้กินจะรู้สึกอร่อยแล้ว ผู้ปรุงอาหารยังรู้สึกผ่อนคลายอารมณ์ดีด้วย

รัฐต้องดัน ต่อยอด – ส่งออกเมนูต้มยำกุ้งสู่ตลาดโลก

หนึ่งในอนุกรรมการ Soft Power อุตสาหกรรมอาหาร ชี้ว่า ด้วยรสชาติที่อร่อยลงตัว ทำให้ต้มยำกุ้งเป็นเมนูที่ได้รับการยอมรับจากต่างชาติอยู่แล้ว ก้าวต่อไปถัดจากนี้ ผู้ประกอบการจึงควรใช้จังหวะนี้ต่อยอดผลิตภัณฑ์ให้ไปได้ไกลมากยิ่งขึ้นโดยรัฐจำเป็นต้องช่วยสนับสนุน โดยเชื่อว่าจะช่วยกระตุ้นเศรษฐกิจของไทยในภาพใหญ่ด้วย

ต้มยำกุ้งโด่งดังมานานหลายสิบปีแล้ว ร้านอาหารไทยหรือบาร์บางแห่งในอเมริกามีเมนูค็อกเทลต้มยำกุ้ง หรือบางที่ใช้น้ำต้มยำกุ้งเสิร์ฟเป็น Welcome Drink ให้กับแขก

“ในฐานะอนุกรรมการ Soft Power อุตสาหกรรมอาหาร คิดว่า รัฐบาลไทยควรใช้โอกาสนี้ในการต่อยอดส่งเสริมภาคอุตสาหกรรมขนาดใหญ่ โดยการพัฒนาต้มยำกุ้งในรูปแบบหลากหลาย เช่น ส่งเสริมการผลิตเป็นเครื่องเทศหรือวัตถุดิบสำหรับ Ready to Cook หรือเมนูพาสเจอร์ไรด์แบบ Ready to Eat เพื่อส่งออกสู่ต่างประเทศก็จะสร้างมูลค่าเศรษฐกิจให้ประเทศไทยมหาศาล”

ในด้านของเศรษฐกิจระดับชุมชน สรเทพ บอกว่า คนไทยมีความสามารถในการคิดค้นและต่อยอดเมนูได้เองอยู่แล้ว เช่น การประยุกต์ทำเป็นก๋วยเตี๋ยวต้มยำ หรือการทำต้มยำน้ำใส แต่ใส่มันกุ้งเพิ่มรสชาติและสีสัน ซึ่งเป็นเมนูที่สำหรับคนไทยอาจคุ้นเคยดี แต่สำหรับต่างชาติกลับเป็นของแปลกที่น่าดึงดูดให้ต้องมาลิ้มลองไม่ต่างจากก๋วยเตี๋ยวเรือที่เป็นกระแสโด่งดังไปทั่วโลก การปรับตัวในระดับชุมชนจึงไม่น่ากังวลใจนัก

‘ต้มยำกุ้ง’ คือ ศิลปะและภูมิปัญญา ดัน soft power มากไป อาจกลายเป็นเชิงพาณิชย์

หลายฝ่ายมองว่า ต้มยำกุ้ง เป็นสัญลักษณ์ของประเทศไทยในสายตาต่างชาติอยู่แล้ว สอดคล้องกับความเห็นของ สรเทพ ที่มองว่า ชาวต่างชาติแทบทุกคนรู้จักต้มยำกุ้งมานานแล้ว หากรัฐพยายามจัดการ ดูแล และผลักดันต้มยำกุ้งในฐานะ Soft Power มากเกินอาจเป็นสิ่งที่ไม่จำเป็นนัก แต่รัฐควรมองต้มยำกุ้งในฐานะของการสร้างภาพรวมทางเศรษฐกิจที่ดีขึ้นมากกว่า

“กว่า 30 ปี มานี้ แทบไม่มีฝรั่งที่มาไทยคนไหนไม่รู้จักต้มยำกุ้ง เรามองว่ามันคือ Soft Power ในตัวเองอยู่แล้ว และอาหารเป็นทั้งศิลปะและภูมิปัญญาที่ต้องใช้ทั้งศาสตร์และศิลป์ หากรัฐพยายามผลักดัน หรือจัดการกำกับดูแลมันในฐานะนั้นมากเกินไปจะกลายเป็นเชิงพาณิชย์ ควรปล่อยให้มันทำงานไปตามธรรมชาติมากกว่า พวกเราคิดว่า สิ่งที่นายกควรทำคือการกระตุ้นภาคอุตสาหกรรมการส่งออกให้มากขึ้นต่างหาก” หนึ่งในตัวแทนของอนุกรรมการ Soft Power กล่าวทิ้งท้าย
